BAROSSA VALLEY, SOUTH AUSTRALIA
VINEYARD NOTES
This wine is a selection of 3 unique premium Rosenvale vineyards in the northern aspect of the Barossa. Our Vine Vale Sands vineyard on Brown/red clay sand mix on white sand over yellow, red, brown clay planted in 1990. The Rosenzweig Vineyard planted in 1969 in Brown sandy loam over red clay with a deeper alkaline soft stone red clay mix and select rows fromthe Highway One Vineyard with a soil profile of red brown earth over red clay provides the Estate Grown Cabernet with a diverse spectrum from each site feathering the palate with layers of richness and character. These vines enjoy a small amount of additional food and supplementary water to help maintain then on tough days. Detailed spur pruning gives better bunch positioning and a limited number of grapes per year.
HARVEST NOTES
The 2015/16 growing season yielded a warm, dry, Spring, with good conditions for flowering and fruit-set. A fortuitous 1.5 inches of rain fell from 21 January, followed by generally mild conditions throughout late January/February. On 9 March, another 1.5 to 2.5 inches of rain fell, after which sugar levels dipped slightly. A warmer than average Spring and early summer (October – December maximum temps were 2-5C warmer than average) meant the vines got away at a cracking pace, growing well and setting a good number of bunches.
This parcel was fermented in 4 open ferments with 2 plunged and all twice daily pump overs and gently pushing down the cap, 8,9,11 & 13 days on skins.
After ferment is done, we press the juice from the skins with our computer controlled open slot air bag press to barrel. The wine undergoes malolactic fermentation then we rack and return to barrel for maturation.
