HARVEST NOTES
After two consecutive dry vintages, the 2020-21 growing season started off in a similar fashion. Winter rainfall was 148mm, the same as the previous winter, however strong spring rains set up what would prove to be an excellent vintage. A warmer than average November again had many on edge, however mild days and cool nights throughout December and January provided optimal ripening conditions. Timely early February rains provided enough soil moisture relief to carry the vines through veraison and ripening. This rain and cooler conditions meant that the vintage was far less compressed than previous years and allowed excellent fruit development while maintaining natural acidity. Quality across the vintage was fantastic with great colour and lifted aromatics.

Destemming only of fruit with 10 days on skins, pumped over and plunged twice daily, open cage bag pressed, wild yeast ferment.  Once complete we must extract the juice from the skins with open slot air bag press to barrel.  The wine undergoes malolactic fermentation then we rack and return to barrel for maturation.

"Very deep, dark red/purple colour with a touch of black in its core; the bouquet is ripe and tarry, dark-chocolaty and the flavours are also in the cocoa-powder/mocha/dark chocolate spectrum with a welter of tannins following and a touch of acceptable bitterness. A very big shiraz and an excellent example of a muscular full-bodied Barossan that will richly repay many years of cellar time. 2025–2043"
