The fruit is selected from our Estate Cabernet vineyards blended together to give us our Estate profile.
The fruit was picked at the flavour point we wanted for the location then destemmed to retain some whole berry, fermented with twice daily pump overs for 7-10 days After ferment is complete, the wines are assessed for style and left to age for around 12 to 18 months in French oak barrel.
A medium full-bodied wine with great colour. Dark sweet fruits with a hint of herbal leafiness on the nose translating to blackcurrants, blackberries and leafy spice with a underlying red capsicum note on a mouth filling palate. Finishing with soft tannins and a balanced acid structure.
This wine has good cellaring potential but was made to be enjoyed now.
Cellaring: 2016 – 2023
Residual Sugar: 0.46g/l
